Choose plump and firm apricots with uniform color.

    KEEP

    While waiting to ripen, store at room temperature. To ripen faster, keep in plastic bag on counter. Once ripe, store in a plastic bag in the refrigerator for up to five days

      PREPARE

      Rinse apricots under cool water before eating or using in a recipe.

        Peach-Melon Salsa

        2 cups peaches, chopped

        1 cup cantaloupe

        4 apricot halves, chopped

        ¼ cup onion, chopped

        2 tablespoons lime or lemon juice

        1 tablespoon fresh mint, chopped (optional)

        1. Wash hands with soap and warm water. Wash fresh fruits and vegetables before preparing.
        2. Chop peaches and apricots. Place in a large bowl.
        3. Stir in cantaloupe, onion, lime juice and mint, if using.
        4. Refrigerate 30 minutes to blend flavors.


        Serve chilled.
